Our equipment is only as good as the soybeans. It must be great quality soybeans and the processing facility must be able to efficiently and quickly process, store, and distribute soybeans. If soybeans are not processed properly, we are simply buying the wrong product. Soybeans are the foundation of every great soy sauce.
That said, buying the wrong product in Soy Sauce is not a problem, but the processing plant is. Because of this, I always buy the soybeans in the same soybean seed, the same variety, and the same brand of soybeans. I don’t buy the processing plant unless the soybeans are not processed properly.

This belt is usually filled with water, and when the soybeans hit it, they are broken down into smaller pieces and shipped out of the plant. Not just because it is a big, metal pyramid that has to be fed with water, but also because you need to make sure the soybeans are not treated in any way that could cause them to be off-tasting. If they are made in a factory that’s not cleaned, then they will have a much stronger aroma and taste.

If you’re going to do something, make the right choices. For instance, there’s not a lot of food in this trailer. I don’t know why we didn’t go over there. The food in this trailer isn’t the same as it’s in the trailers in most cities.
